Acid value/free fatty acids. Determination in fats. (NMKL 38, 4 Ed., 2001)

Acid value is a measure of the free acids content in fats. It is defined as the number of mg KOH required for neutralizing 1 g of fat. The acid value can also be expressed as the amount (in %) free fatty acid. The fat is dissolved in a mixture of equal volumes of 96% ethanol and diethyl ether, and titrated with 0.1 mol/L potassium hydroxide solution until endpoint with phenolphthalein as the indicator. Happoluku/Vapaat rasvahapot. Määrittäminen rasvoista. (NMKL 38, 4. painos, 2001)

Happoluku on rasvassa olevien vapaiden happojen määrän mitta. Se määritellään milligrammoina KOH:a, joka tarvitaan neutraloimaan 1 g rasvaa. Happoluku voidaan ilmaista myös vapaiden rasvahappojen määränä (%). Rasva liuotetaan 96 % etanolin ja dietyylieetterin (1:1, v/v) seokseen ja titrataan 0,1 mol/l kaliumhydroksidiliuoksella päätepisteeseen käyttäen fenoliftaleiiniä indikaattorina.
