Description
The method described is a rapid method for the qualitative determination of histamine in fish. The method can be applied to fish products and has only been tested on such products. If it is intended to apply the method to foods other than fish products, it should be noted that it may be necessary to introduce modifications. The histamine is extracted with methanol. The determination of histamine is performed by thin-layer chromatography and the spots are visualized with nin-hydrine reagent. The quantification can be carried out semi-quantitatively using standards.
