Acid value is a measure of the free acids content in fats. It is defined as the number of mg KOH required for neutralizing 1 g of fat. The acid value can also be expressed as the amount (in %) free fatty acid. The fat is dissolved in a mixture of equal volumes of 96% ethanol and diethyl ether, and titrated with 0.1 mol/L potassium hydroxide solution until endpoint with phenolphthalein as the indicator.
