Description
This method is intended for enumeration of Brochothrix spp. in meat and meat products. This method was originally for use in the determination of Brochothrix thermosphacta in various meat products including refrigerated, fresh and heat-processed products. However, the method does not differentiate between Brochothrix species, and Brochothrix campestris is also determined by this method, if present in the meat. Brochothrix spp. are enumerated by surface plating of appropriate dilutions on to streptomycin sulphate – thallium acetate agar (STA). Plates are incubated at 25.0 ± 1.0°C for 48 ± 4 h. Confirm five colonies from STA medium by testing for catalase and oxidase reactions.
